April Hoy, edu­ca­tion coor­di­na­tor at the Strat­ford Eco­log­i­cal Cen­ter off Lib­erty Road, describes how sap trav­els in a tree as she shows the center’s maple syrup oper­a­tion to a group of home-schooled chil­dren Wednes­day. The same tours will be avail­able for the gen­eral pub­lic the next two Sat­ur­days, Feb. 23 and March 2. Tours will start each 30 min­utes from 10 a.m. to noon at the non­profit cen­ter. The cen­ter also will host a pan­cake break­fast March 9, with serv­ings every hour from 8 a.m. to noon. The maple sugar tours are $3; the pan­cake break­fast costs $10, $7 for ages 2 to 12.
